Double Pickle, Double Cheese Angus Beef Melt

  • 2 tablespoons olive oil
  • 1 onion, halved, sliced
  • 1 packet Green Meadows x McClures Angus Beef & Pickle burgers
  • 8 slices ciabatta or sourdough bread, buttered
  • Mayo
  • 8 slices tasty cheese
  • Blue cheese (or swap out for another of your favourite cheeses)
  • 4 gherkins, sliced
  • Jalapenos, optional


Heat the oil in a heavy-bottomed frying pan over a medium-high heat. Once hot add the onion and fry until soft and translucent. Push the onion to the sides of the pan and add in the patties. Fry these until golden brown and cooked through then remove from the heat and place a wooden spoon under one side of the pan to allow the fat to drain from the onions and patties.

Arrange 4 slices of bread in a toasted sandwich maker (you can also make these in a frying pan, pushing down on the melts as they cook), butter side down.

Spread each piece with mayo then divide the onions between the 4 pieces of bread.

Cut the patties in half and arrange two halves on top of the onions. Follow with the cheese and the gherkins and jalapenos if using. Top with the remaining pieces of bread, butter side up, then toast until golden brown.

Cut in half and serve immediately.
