Burger SaucePut all the ingredients for the burger sauce into a small bowl, season with sea salt then mix well to combine.
Burgers
Divide the mince into 8 equal balls (we measured ours on scales). Cut two rounds of baking paper to fit inside the smash burger press. Line the press with the baking paper, put a ball of mince on top of this followed by the other piece of baking paper. Press down firmly to make your smash pattie. Remove the pattie and set aside then repeat with the remaining balls of mince.
Heat a little oil in a heavy-bottomed frying pan and cook the smash patties over a high-heat in batches until just cooked through then lay cheese on half of the patties and top with the remaining patties then cook for a further minute until the cheese has melted. Season with sea salt and remove from the heat.
To make the burgers spoon the burger sauce onto the bottom half of the buns followed by the lettuce, tomato and onion rings. Next place the pattie on top followed by the lid with extra burger sauce if desired. Serve with homemade chips and a crisp green salad.
