Ingredients
Cheeseburger
- 3 tablespoons olive oil
- 1 tablespoon butter
- 1 large brown onion, cut into rounds
- 500gms Green Meadows Beef Mince
- 1 egg
- ½ small red onion, finely chopped
- 1 clove garlic, minced
- 1 tablespoon thyme, leaves removedfrom stalks
- 2 teaspoons wholegrain mustard
- ¾ teaspoon flakey sea salt
To Serve
- Buns, sliced in two
- 6 thick slices tasty cheese
- Gherkins, sliced lengthways
- Mayonnaise
- Tomato sauce
Method:
In a heavy-bottomed frying pan over a medium-high heat melt together 1 tablespoon of olive oil and the butter. Once hot add the onion rings and cook until beginning to char. Remove from the pan and set aside.
Place the mince, egg, red onion, garlic, thyme, mustard and salt into a bowl and season with freshly ground black pepper. Using clean hands mix together until well combined.
Divide into 6 rounds and shape into patties. Heat 1 tablespoon of olive oil in the pan you used to cook the onion rings. Once hot place 3 patties in the pan and cook for 3 minutes on each side. Remove from the pan, add the remaining 1 tablespoon of olive oil and cook the last 3 patties as above. While the patties are cooking place the buns onto a baking tray cut side up.
Top the bottom halves with a slice of cheese and grill until melted and the top halves are golden brown. Remove from the oven, top with a pattie, gherkins and the onion rings then spread mayonnaise and tomato sauce on the tops before closing and serving.
If you like a more generous pattie, then double the recipe and make 6 larger ones. They will require several more minutes each side to cook.
