Cut from the loin with the belly attached, our Rindless Middle Bacon makes for delicious eating. It’s got all the elements you want in a great bacon – crunchy skirt, meaty centre, massive flavour. Plus we’ve trimmed the rind off so it’s ready for a multitude of applications.

A pan is the best approach here… no matter the application. You’re aiming for a bit of colour in the centre and on the belly bits to render some of that fat and get nicely crisp.

As always, you want the pan hot enough for a few drops of cold water to dance on it… but not ripping hot. As you’re cooking it, the belly bit round the edge may curl up a wee bit – don’t panic – this is totally normal and will settle once you turn the bacon over. Don’t crowd the pan (you need airflow to crisp up those edges).
