Ingredients
- 1 ½ tablespoons olive oil
- 1 tablespoon sesame oil
- 1 onion, finely diced
- 6 cloves garlic, minced
- 1 tablespoon freshly ground ginger
- 500g Green Meadows Premium Beef Mince
- 4 tablespoons Tamari
- 1 ½ tablespoons brown sugar
- ½ teaspoon Korean red pepper flakes
- ½ cup mayonnaise
- 1 tablespoon hot sauce of your choice (we used sriracha)
- 1 cup rice, cooked as per packet instructions
- 12 lettuce leaves
- 1 avocado, sliced
- 200g green beans, halved, steamed
- ½ cucumber, halved lengthways, sliced
- 4 eggs, fried
- 1 spring onion, thinly sliced
- 100g roasted, salted peanut, chopped
Method:
In a heavy-bottomed frying pan over a medium-high heat fry the onion until soft and translucent then add in the garlic and ginger and fry for a further minute or two.Add in the mince and brown, breaking it up with the wooden spoon as you go. Lastly add in the Tamari, brown sugar and the red pepper and cook for a further minute. Remove from the heat and set aside.
Put the mayonnaise and the hot sauce into a small bowl and mix to combine.
Divide the rice between 4 bowls, top with the mince then add in the lettuce, avocado, beans, cucumber and eggs.
Drizzle with the mayonnaise then sprinkle over the spring onion and peanuts and some extra Korean pepper if desired then serve.
