Ingredients
- 1 onion, quartered, finely sliced
- 2 tablespoons olive oil
- 1 shortcrust pastry
- 4 eggs
- 200ml cream
- 75g Gruyere cheese
- 75g Parmesan cheese
- 200g ham, thinly sliced, shredded
Method:
Pre-heat the oven to 180°C. In a heavy-frying pan, cook the onion in the olive oil over a medium-high heat until golden-brown. Remove from the heat and set aside.
Grease a 30cm tart dish with butter then line with the pastry. Prick all over with a fork then cook in the oven for 12 minutes or until golden-brown and the pastry on the bottom of the dish is cooked through. Remove from the oven.
In a small bowl, whisk together the eggs and the cream. Add in the cheese, season with sea salt and freshly ground black pepper. Arrange the onions and the ham in the bottom of the tart dish, pour over the cream mixture and return to the oven. Cook for 20-25 minutes or until cooked through in the centre and golden.
Serve with your favourite side salad and enjoy!
