Ingredients
- 1 ½ cups brown rice, cooked as per packed instructions
- 1 medium red onion (roughly 80g), finely chopped
- 1 cup parsley, finely chopped
- ¾ cup mint, finely shredded
- ¾ cup roasted, salted peanuts, chopped
- 1/3 cup currants
- 100ml olive oil
- 100ml white wine vinegar
- 100ml olive oil
- 1 ½ teaspoons sea salt
- ½ teaspoon curry powder
- 1 clove garlic, minced
- 1 teaspoon honey
Method:
Cook the brown rice in either a rice cooker or in a pot. Let cool, once cooked.Put the cooked rice into a salad bowl and add in the onion, herbs, peanuts and currants then mix well.
In a small jar combine the oil, vinegar, sea salt, curry powder, garlic and honey then put on the lid and shake well.
Pour over the salad, mix again then serve.
