Brown Rice, Peanut, Currant and Herb Salad

Ingredients

  • 1 ½ cups brown rice, cooked as per packed instructions
  • 1 medium red onion (roughly 80g), finely chopped
  • 1 cup parsley, finely chopped
  • ¾ cup mint, finely shredded
  • ¾ cup roasted, salted peanuts, chopped
  • 1/3 cup currants
  • 100ml olive oil
  • 100ml white wine vinegar
  • 100ml olive oil
  • 1 ½ teaspoons sea salt
  • ½ teaspoon curry powder
  • 1 clove garlic, minced
  • 1 teaspoon honey

    Method:

    Cook the brown rice in either a rice cooker or in a pot. Let cool, once cooked.

    Put the cooked rice into a salad bowl and add in the onion, herbs, peanuts and currants then mix well.

    In a small jar combine the oil, vinegar, sea salt, curry powder, garlic and honey then put on the lid and shake well.

    Pour over the salad, mix again then serve.
