BBQ Pork Belly Soft Tacos

Ingredients

  • 1 x packet Meat Street BBQ Pork Belly Strips, cooked as per packet instructions, cut in two
  • 5 Farrah's small tortillas
  • 1 ¼ cups slaw mix of your choice
  • 1 smallish apple, cut into matchsticks
  • ¼ cup coriander, chopped, plus extra to serve
  • Juice of 1 lime, plus extra wedges to serve
  • ½ cup sour cream
  • 1 clove garlic, minced
  • 2 tbsp of your favourite hot sauce

GUACAMOLE

  • 1 avocado
  • ¼ cup coriander, chopped (for guacamole)
  • 2 tablespoons finely chopped red onion
  • Juice of 1 lime (for guacamole)

    Method:

    Mix the apple and half the coriander through the slaw, squeeze over the juice of 1 lime, drizzle with olive oil and season with salt.

    Mix together the sour cream, garlic and hot sauce.

    For the guacamole: mash the avocado, season with salt and a good pinch of smoked paprika, then stir through the coriander, red onion and lime juice.

    Lay out the wraps, spread each with the sour cream mixture, then pile with slaw, add two pieces of the pork and dot with the guacamole. Top with extra coriander and serve with lime wedges. Enjoy!
