Mike's Chilli Con Carne
MIKE'S CHILLI CON CARNE

Cook time: 45 minuts
500g Green Meadows Angus Beef mince
1 onion, peeled and diced
2 Tbsp oil
4 cloves garlic, peeled and crushed
500 ml beef stock
1 tbsp brown sugar
1 can black beans, drained
1 can chopped tomatoes
Heat a large fry-pan or pot and slowly sauté the onions and garlic in the oil, once soft, turn up the heat before adding the beef mince.
Continue to break up the mince to ensure it all cooks evenly.
As soon as the mince starts to brown, add the spice mix followed by the canned tomatoes, stock and black beans.
Stir well, then allow to simmer for 30 minutes.
AS A NACHOS DISH
Dish over tortilla crisps and top with your choice of cheese (I’d recommend cheddar). Pop in the oven on grill until cheese is golden, then top with your choice of toppings, such as; sour cream, jalapenos/chilis, guacamole or hot sauce (as hot as you can handle).
AS A TACOS DISH
I would serve the chilli in some soft shelled tacos, rice with a garnish of crispy
lettuce, coriander and a dollop of sour cream.
